There are various note taking apps available including S Note that comes with the Samsung Note range, for me though, 2 really stand out.

Lecture Notes - £2.69
I'd highly recomend both.
If you have S Note then I'd also highly recomend Snap Pad as an add on - £1.12

Papyrus is pleasant to use, although I don't think you can delete or rearrange pages, or import files, so it's pretty limited. The highlight for me is that a page can be infinite, so I won't run out of space on a page like in S Note.
It's a note taking app, but the pressure sensitivity is quite nice so I sketch/draw in it as well. It's free to use but if you want some extra features, like a true eraser instead of just a stroke eraser, you need to pay.
